Easy One Bowl Lemon Blondies

 



These lemon blondies are a must-try, especially for springtime vibes! They're seriously easy to whip up, and cleanup? Minimal. That's a win-win, right? Pop them in the oven for about 15-18 minutes, and voila! You've got yourself a batch of super moist and soft treats ready to enjoy.

Blondie:

8 tablespoons of melted unsalted butter
1/2 cup of sugar
1/4 cup of powdered sugar
2 eggs at room temperature
Zest of 2 medium lemons
Juice of 1 lemon
1 1/2 teaspoons of vanilla extract
1/2 teaspoon of almond extract
1 cup of all-purpose flour

Icing:

1 cup of powdered sugar
1 teaspoon of vanilla extract
Juice of 1 lemon
Zest of 1 lemon

Directions:

Preheat your oven to 350°F. Grease an 8x8 baking dish and line it with parchment paper.
In a medium bowl, whisk together the melted butter, sugar, and powdered sugar.
Add the eggs, lemon zest, lemon juice, and extracts to the bowl, and whisk until combined.
Slowly fold in the flour until fully mixed into the wet ingredients.
Bake for 15-18 minutes until the edges are slightly golden, but don't overbake.
Let the blondies cool for about 30 minutes.
Prepare the glaze by mixing powdered sugar, lemon juice, vanilla extract, and lemon zest. Pour it over the cooled blondies and let it set before digging in! Enjoy!
