Lemon Cookie Sandwiches
Lemon Cookie Sandwiches are here to brighten up your day! 🍋🍪 I couldn't wait to kick off our lemon series with these soft delights, filled with a zesty lemon cream cheese buttercream. They're ready in just 10 minutes of baking and trust me, they're irresistible. Check out the full recipe below!
Cookie:
16 tablespoons of softened unsalted butter
1 1/4 cups of sugar
Zest of 2 small lemons
1 egg at room temperature
3 tablespoons of lemon juice (separated)
1 teaspoon of vanilla extract
2 2/3 cups of all-purpose flour
1 teaspoon of baking soda
1 teaspoon of baking powder
1/4 teaspoon of salt
Lemon Cream Cheese Buttercream:
8 ounces of softened cream cheese
8 tablespoons of softened unsalted butter
Zest of 1/2 lemon
Splash of lemon juice
3 1/2 - 4 cups of powdered sugar
2 tablespoons of heavy cream
Directions:
Preheat the oven to 350°F and line a large cookie sheet with parchment paper.
In a medium bowl, beat together the butter, sugar, and lemon zest until smooth.
Squeeze the juice from both zested lemons, remove 1 1/2 tablespoons, and add it to the mixture along with the vanilla extract. Set aside the remaining lemon juice.
Slowly add the dry ingredients to the mixture and beat until combined. Chill the dough for 10 minutes.
Use a small or medium ice cream scooper to scoop the cookie dough and roll it into balls. Place them on the cookie sheet, leaving about 2 inches of space between each cookie.
Bake for 5 minutes, then flatten the cookies with the back of a spoon or measuring cup. Bake for another 5 minutes until done. Remove from the oven and use a round cookie cutter to shape them perfectly round if desired. Transfer to a cooling rack.
Make the frosting by beating the butter and cream cheese together until smooth. Add the lemon zest and the remaining lemon juice. Gradually add the powdered sugar and beat until smooth. Mix in the heavy cream until combined.
Place the frosting in a piping bag and pipe it onto the bottom of a cooled cookie, then place another cookie on top. These cookies are delicious on their own too! This recipe makes 10-12 sandwiches.
