Strawberry Lemon Oat Bars

 





Introducing Strawberry Lemon Oat Bars! They're buttery, zesty, a tad chewy with oats, and oh-so-gooey with strawberry preserves. Perfect for a delightful Wednesday treat!

For the BASE:

9 tablespoons salted butter, softened
1/4 cup plus 2 tablespoons granulated sugar
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 cup old-fashioned rolled oats
Zest of one lemon

First, preheat your oven to 350°F and line an 8x8 pan with parchment paper. Cream together butter, sugar, lemon zest, and vanilla until fluffy. Then add flour and oats, mixing until combined. Press the mixture into the pan evenly and bake for about 20 minutes until lightly browned.

For the Strawberry Preserves:

1 cup store-bought or homemade strawberry preserves
For the TOPPING:

8 tablespoons salted butter, softened
5 tablespoons powdered sugar
3/4 cup all-purpose flour
1/2 cup old-fashioned rolled oats
Zest of one lemon

Now, let's make the topping: Cream together butter, lemon zest, and powdered sugar until fluffy. Add flour and oats, mix until combined. Spread the strawberry preserves over the baked base, then drop dollops of the topping over the preserves. Bake for about 35 minutes or until the top turns golden brown.
